Sarah recommends dinner at Dasheene (at Ladera in the south) as a must, not least for its fabulous cuisine and the breathtaking views of the Pitons. "St Lucia is a great island for exploring whether you are into hiking, mountain-biking or something less strenuous – but car hire is definitely not for the fainthearted due to the winding roads. I prefer to use local taxis or jeep excursions."
