For those who would like to sample and learn to cook on holiday Vietnam's delicious and varied cuisine as well as visit many of its major sites, this is the ideal trip on the Exodus menu. In addition to four instructive cooking classes, we have included several meals at notorious restaurants to provide you with the full flavour of Vietnam's delicious cuisine. We will also explore local markets, industries and homes to gain a look behind the scenes about how the landscape and culture of a country shapes its cuisine. Vietnam itself has a colourful and complex history that has left its mark on the entire length of the country, from the swamps of the Mekong Delta up to the remote highlands bordering China. The paddy fields and rice farmers in conical hats, palm-fringed white sandy beaches and the incredible limestone stacks at Halong Bay make this a paradise for photographers as well as gourmets.

Day 1 | Depart UK | Day 2 | Start Hanoi; afternoon sightseeing tour including the Temple of Literature, Hoa Lo Prison and the Old Quarter. Dinner at local restaurant to try North Vietnamese specialities. | Day 3 | To Halong Bay and cruise among spectacular limestone formations with local seafood lunch; return to Hanoi. | Day 4 | Morning visit Ho Chi Minh's Mausoleum, House on Stilts and One-Pillar Pagoda; lunch with Vietnam's famous noodle soup - 'Pho'. Free afternoon in Hanoi for individual exploration; overnight sleeper train to Hue. | Day 5 | Morning cookery class to acquaint ourselves with Hue's 'Imperial' cuisine; afternoon cruise on Perfume River to Thien Mu Pagoda & Tu Duc. | Day 6 | Visit Imperial Citadel; drive to Hoi An. Afternoon walking tour. | Day 7 | Two afternoons of cooking classes at Red Bridge Cooking School. Mornings are dedicated to exploring a market garden, fish sauce factory and a local family who specialise in Hoi An dumplings (Banh Boa). | Day 8 | As above | Day 9 | Fly to Nha Trang; afternoon free by the beach. Evening barbeque at popular local restaurant. | Day 10 | Cruising round Nha Trang's offshore islands; swimming and snorkelling with seafood lunch.
| Day 11 | Along coast to city of Dalat, famed for its cooler climate and fresh garden vegetables. Visit Summer Palace and central market. | Day 12 | Through the trea and coffee plantations of Central Highlands and family houseboats of Lake Langa to Ho Chi Minh City (Saigon). | Day 13 | Morning cooking class at Vietnam Cookery Centre followed by delicious lunch. Afternoon city tour. | Day 14 | Cruise Mekong Delta visiting local villages and small home industries such as coconut candy and honey production.
